Rajwadi Undhiyu Masala
Step 1: Chop 500 g vegetables like root veggies like purple yam (kand), regular yam, sweet potatoes and baby potatoes, small brinjals, raw or ripe bananas, ivy gourd other vegetables of your choice and keep aside.
Step 2: Take a big bowl, with 1 medium fresh coconut, Chopped a bundle of fresh coriander leaves, 100gm fresh garlic with leaves, 5 green chillies, 50 gm fresh ginger, Richswad Chilli Powder, Richswad Coriander Powder, Richswad Undhiyu Masala, half tbsp baking soda, sugar & salt as your taste, Add chopped vegetables and mix well.
Step 3: In a Heavy Bottom large kadai, add 4 tbsp oil, Set layer by layer of vegetables, Add 1 glass of water, cover it and put on medium heat for about 10‐15 minutes.
Step 4: Once the vegetables start cooking, add the Methi Muthia(fenugreek leaves dumplings) to vegetable while keeping on simmer, Allow to cook for about 30 min on low flame, You are ready to serve the Rajwadi Undhiyu with Puri, Roti or Paratha for rich taste.
